The wine had occasional lees stirring and approximately two-thirds underwent malolactic fermentation

Some stone fruit on the nose gives way to a lovely citrus element on the palate and finished with undertones of orchard blossom

The fermentation was stopped in an off-dry style to provide palate weight and texture

skinsy Cabernet Franc with cherry fruit and that defining herbaceous waft of green capsicum pepper

The organic grapes for this dry white are picked a little earlier to keep acidity and freshness high

After destemming and soft pressing at low temperatures

persistent bubbles

melding beautifully with silky tannins and a little grip on the finish

The nose brims with strawberry

This is balanced by an energetic acidty and well-rounded tannins
