Eleven months in seasoned barrels add a silken

to capture the essence of the vines

The wine remained on the gross lees for five months

which thrives in the cool climate and limestone soils

The wine is matured in oak casks for a period of sixteen months with twenty-five percent oak used

It was transferred out of oak prior to the following harvest and left on yeast lees for a further six months
