This is a negociant wine where the grapes come from a producer named Stardust Valley. 373 bottles bottles produced. No SO2 was used.
98% of Pinot noir comes from Kimura farm
fermented with wild yeasts at 14-18°C for 3 months
The Merlot was fermented in stainless steel tanks for 50 days and the Cabernet Franc and Cabernet Sauvignon for 65 days
The wine is already delicious now
but it has been made to be mellow for the next five years
