After 7 days on skins the wine was pressed and left to finish fermentation in stainless
sage and strawberry liqueur
A small portion of the fruit was hand-harvested with the balanced harvested in the cool of the morning and delivered to the winery
The wine was blended in September 2020 then returned to oak for maturation with a total of 20
with the balance machine harvested in the cool of the morning
Planted in the mid 90’s on their own roots
