highlighting that the acid is flying away
and 20mg/L of sulfite added
It is delicious now
unfiltered and unfined
the temperature was not controlled and 35% of the wine was fermented in 500L barrels
The Dornfelder grapes (whole bunch & destemmed) were harvested first and fermented with natural yeasts in semi-maceration carbonic
The nose has raspberry
It was pressed
and left in a barrel for a year before blending and bottling

After two days of fermentation
